Recipes collected from friends who are on or have been on the Cambridge VLCD diet. With grateful thanks.
Muffin
Put a little BOILING WATER into a ramekin dish, or whatever you have – thick mug or similar (about 2 desert spoons to begin with – you can add more water later if necessary)
Add the choc pack (or whatever flavour you desire) and mix it to a THICK PASTE so thick you think it’s too thick!
Put into the microwave on high for just over a minute – if it looks a bit soggy in the middle put it back for 10 seconds or so.
I have not yet tried this recipe and will let you all know how my experience is after I do.
Variations:
You could also add some of your nut crunch bar to make a brownie!
You could add a teaspoon of coffee.
Ice Cream
Put 11 ice cubes in a liquidiser (a strong one) and crush the ice. Add a food pack, a small amount of water (about 2 tbsp) and liquidise for 5 mins. You end up with a big bowl of “ice cream”
Or for the simple version a mix-a-mousse added to your fav flavour shake whilst blending 150ml of water with it. Leave in freezer for 10 mins for the mousse or 45 mins for the ice-mousse.
Smoothie
Place 10-16 ice cubes (depending on your preference), a pint of water, and your food pack in a smoothie maker and blend for approx. 3 mins. Makes about 2 pints of delicious cold frothy whatever flavour you like.
Try adding one of the water flavourings for a different taste!
WOW this is great with the fruits of the forest shake.
Bars of Chocolate
You can make chocolate out of a chocolate pack. Mix pack with a bit of water till you have a thick paste, then spread on some tin foil and put in the freezer for an hour or more. It really tastes quite like chocolate.
I can recommend the Chocolate Orange shake for this recipe for all us Terry's chocolate orange lovers.
Mars Bars
Variation: Use half chocolate and half vanilla for a mars bar!
Black Forest Gateau
10 ice cubes, chocolate pack, 8oz water and 5tsp of fruits of the forest flavouring in the smoothie maker
Cheesecake smoothie
10 ice cubes, vanilla pack, 8oz water and tsp of st clements flavouring in the smoothie maker
Chocolate Biscuit
Put sparkling water into a chocolate pack and then add a pinch of salt. Put this on a small plate, round it into a biscuit shape and bake it in the microwave for 2 1/2 mins. The result is a crunchy chocolatey biscuit with a dunking texture.
I found both the Butterscoth and Toffee and Walnut chakes are yummy scrummy as the cookie.
Black Forest Cookie
Add 1 choc pack to sparkling water (3 tbs give and take) add fruits of the forest flavour (half teaspoon) put in the microwave for one minute (let it settle) and you have the fluffiest cookie ever
Chocolate Fudge
1 packet of chocolate
1/4 cup of hot water
2 or more sweeteners
1tsp of coffee (if you like)
Mix well – it should look like a thick chocolate soup. Microwave it for 2 mins. It comes out as a thick gooey mess, which tastes like fudge!
A great late night warm up apparently though I have not tried this yet.
Lollies
Use raspberry mixed with 200-300mls of sparkling water and pour into lollipop moulds and freeze.
Caffe Latte
Mix a hot vanilla shake add a teaspoon of coffee and some sweeteners
Chocolate Pudding and Chocolate Sauce
Microwave most of the choc pack like a cookie but keep some aside and mix into a thick paste whilst the muffin is cooking. Take muffin out and smear with thick choc goo and eat. It really does taste nice and cools the muffin down. This could be done with vanilla icing too
Chocolate Custard
Dissolve a sweetener in approx 70mls of hot water. Add a chocolate pack, microwave for approx 40 secs. Makes a lovely hot choc custard. A whole pack of this was a bit sickly for me though, so next time I used half the quantities and had it on top of a muffin.
Hot Choco-mint
Make up some strong peppermint tea. Mix a chocolate pack with hot water and a couple of sweeteners add the tea. Microwave for approx 20 secs and stir – better if whisked with an aerolatte – Divine.
Chicken stuffing
Mix as you would for a muffin but use a savoury mix instead. Microwave for 1 1/2 mins more or less depending on how dry you like it
Variation: try using mushroom for less rich taste, or even half and half
A variation of the soup
Mix soup and add a bit of Tabasco and a sweetener tablet. Sounds weird putting a sweetener in the soup but it tastes nice
Poppadoms
Mix a soup pack with a very small amount of water (about 5 dessert spoons), into a smooth paste, spread on a plate or greaseproof paper and microwave for about 3 mins. Let it settle, when golden take out let it cool then peel off and enjoy. Be careful to not overcook as this makes them taste slightly bitter.
Ice lollies
Make up the fruits of the forest or st clements a bit stronger than normal and put into ice lolly moulds and freeze.
Lemon Sorbet
Ice cubes in the smoothie maker with some water to make it slushy. Add st clements or fruits of the forest to your taste and hey presto you have a sorbet/slush puppy!!
Lemon Biscuits
Cut up a lemon bar into 8-10 pieces. Arrange on a pate 3 or 4 at a time to give them space to expand. Microwave for 1 min 15 – or until they stop bubbling. Be careful as they may start burning from the inside out. Use a knife under the biscuits to prise off the plate.
Variations: if you slightly burn the lemon bar it tastes like ginger crunch biscuits.
Toffee biscuits
As lemon but use a toffee bar
Fruit Biscuits
As lemon but use a Fruit bar
I have used the peanut bar for the biscuits as above and found they did not spread out and tasted very much like the hot spicy nuts they used to sell in bars. Well without the spice!!!!
